Winemaking Process: The Pinot Noir grapes for this rosé were harvested from Block 22 in late March 2023 at optimal ripeness. The grapes were destemmed and allowed to rest on their skins for a few hours to achieve the desired colour. The must was then gently pressed, with only the free-run juice used to ensure purity and avoid excessive phenolics. The juice was clarified before undergoing a cool fermentation, with a small percentage of Riesling added post-fermentation to enhance freshness. The wine was matured on lees for a short period to build body and texture, before being fined, filtered, and bottled in August 2023.
