This year, our cellar rat hails from the Cradle Coast — Liam Quaile — who crafted a lively, skinsky Pinot Gris in a uniquely hands-on way. Liam experimented by pouring fermenting Pinot Gris juice onto freshly de-stemmed Pinot Gris berries, stirring the mixture twice daily. Once dry, he pressed and aged the wine in neutral oak barrels. The result is a juicy, orange wine that’s delicately skinsy — not full on skins — with just the right touch of phenolics and flavour. Unfined and unfiltered, bottled with low SO2 to preserve its natural vibrancy.
