- Ingredients: From the steep north-facing slopes of the Butcher’s Hill Vineyard, established in 2003. The vintage benefited from an unusually warm winter, leading to early budburst and high-quality fruit. The grapes were handpicked with 25% whole bunch inclusion, fermented on skins for about 10 days, followed by 8 days of post-fermentation maceration. The wine matured for 10 months in French oak barrels, with 35% new oak of medium toast and tight grain.
