Producer Background

Longview Vineyard, located near Macclesfield in the Adelaide Hills, is a family-owned vineyard renowned for its quality and innovation. Since its establishment in 2001, Longview has become one of Australia's most awarded vineyards, known for producing exceptional wines.

Vintage Notes

The 2021 vintage in the Adelaide Hills was near-perfect, providing ideal conditions for growing high-quality Cabernet Sauvignon. Excellent rainfall in Spring and mild breezes during summer showers ensured a long ripening period, resulting in complex fruit flavours, slow sugar development, and excellent acid retention.

Vineyard & Winemaking Notes

The Devil's Elbow Cabernet Sauvignon is sourced entirely from Longview's vineyard. Hand-picked fruit is de-stemmed, crushed, and open fermented on skins for 14 days. Malolactic fermentation occurs in 2nd and 3rd use puncheons, where the wine remains for 12 months. Estate fruit from 28-year-old vines ensures high-quality production.

Flavour Profile

This Cabernet Sauvignon is rich purple and violet in colour, with aromas of blackcurrant, clove, mint, and spiced dark cherry. The palate features toasty oak characters, perfectly balanced tannins, and a long, clean finish. Youthful and fresh, this wine is built for longevity and will cellar well for the next decade.

Food Pairings

The Devil's Elbow Cabernet Sauvignon pairs excellently with hearty dishes such as slow-cooked beef, lamb roasts, and strong cheeses. Its robust flavour profile also complements rich pasta dishes and gourmet burgers, making it a versatile choice for various dining occasions.
